Ingredients:

Method:

Ingredients:
450g pork, 1 scallion, 4 star anise, 30g rock sugar, 1/3 teaspoon fine salt, 2 tablespoons raw soy sauce, and 2 tablespoons.
Method:
1) Boil water in the pot, add meat cubes and simmer for about 2-3 minutes. Remove and wash well. Set aside.
2) Put 1 tablespoon of oil in the pot and add small pieces of rock sugar. Stir fry over low heat to make the sugar color.
3) When the smoke starts to rise in the pot, the rock sugar melts and turns dark brown.
4) First add scallions, ginger slices, and star anise to create a fragrant stir fry, then add pork belly and stir fry over low heat.
5) Stir fry until the pork belly is slightly greasy and evenly colored.
6) Add clean water, just enough water to cover the meat. Salt, light soy sauce, aged soy sauce, cooking wine.
7) After covering and boiling over high heat, turn to low heat and simmer for about 60 minutes. When 1/3 of the soup is left, remove the ginger slices, star anise, and scallions.
8) After about 50 minutes, open the lid and simmer the soup over medium heat until it thickens.
Heat clearing and detoxification - crucian carp tofu soup
Ingredients:
400g crucian carp, 400g tofu, 15g yellow wine, salt, monosodium glutamate, scallions, ginger, and pepper powder.
Method:
1) Cut tofu into 1cm thick thin slices, soak in salt water for 5 minutes, drain and set to use
2) Remove the scales and internal organs of crucian carp, coat with yellow wine, and marinate with salt for 10 minutes
3) Heat the oil in the pot, fry the fish on both sides until yellow, add scallions, ginger, and an appropriate amount of water, and simmer over high heat for 10 minutes. Turn to low heat and simmer for 30 minutes
4) Then add tofu and cook for about 5 minutes. Season with salt, pepper, chicken essence, and sprinkle with scallions

Method:
